30 minute Spicy Sausage Stew

30 minute Spicy Sausage Stew

What you’ll need:

1 package al fresco Spicy Jalapeno Chicken Sausage

2 cups frozen bell pepper and onion blend

1 medium green zucchini cut into thick slices

3 cloves garlic

1 can Cannellini beans, drained and rinsed

2 medium carrots sliced

1/2 cup strained tomatoes

2 cups chicken broth

1 tsp. chipotle seasoning

1 tsp. dried oregano

2 tbsp. dried chives

  • Preheat oven to 350 degrees.
  • While oven is preheating, brown sausages in a pan for about 5 minutes then place them in the oven.
  • Sauté garlic, onion, peppers, carrots and zucchini in a saucepan. Season with chipotle seasoning, dried oregano and chives. Cook for 5 minutes
  • Add strained Cannellini beans, tomatoes, and chicken broth. Simmer for 5 minutes.
  • Remove sausage from oven, cut each sausage into half and add to saucepan. Simmer for another 2 minutes and serve with your favorite rice.
