Chicken Sausage and Eggs ChilaquilesServings: 4
What you’ll need:
1 pack of al fresco Country Style Breakfast Sausage
2 large eggs
½ cup salsa verde
2-3 cups of your favorite tortilla chips (I used grain free chips)
½ cup queso fresco, shredded
Bunch of cilantro, finely chopped, to taste
Optional topping: avocado to taste
- Slice breakfast sausage sideways until you are left with many small cubes, heat a skillet to medium heat and cook sausage until both sides are golden. Remove from the skillet. In the same skillet, fry the eggs.
- In a cast iron skillet or a regular skillet, heat the salsa verde for about 5 minutes at low temperature, remove from the heat and add tortilla chips, and mix..
- Top the tortillas with the sausage, the eggs, queso fresco and cilantro. Serve immediately.
