
Chicken Sausage and Sweet Potato Skillet

Chicken Sausage and Sweet Potato Skillet
Servings: 2What you’ll need:
1 package al fresco Rotisserie Style Chicken Sausage
2 large sweet potatoes
1 bunch baby broccoli
2 tsp. smoked paprika
2 tsp. garlic powder
1 tsp. fresh thyme
2 tsp. onion powder
3 tbsp. olive oil
juice of one lemon
salt and pepper to taste
Directions:
- Preheat oven to 400 degrees F
- Cut sweet potatoes into chunks and toss with 2 tbsp olive oil and seasonings. Arrange in a 10 inch skillet
- Cut chicken sausage into large chunks and arrange on top of the sweet potatoes. Cook in the oven for about 25 minutes or until sweet potatoes are browned and tender.
- Meanwhile heat 1 tbsp olive oil in a pan over medium heat. Cook broccoli with salt, pepper and lemon juice for about 3-5 minutes. Remove from heat.
- Once the sweet potatoes have cooked, toss in the broccoli and serve.
