Chicken Sausage and Vegetable Pasta Skillet

Chicken Sausage and Vegetable Pasta Skillet
Servings: 6What you’ll need:
1 package al fresco Roasted Garlic Chicken Sausage, sliced
16 oz whole grain spaghetti (also works with linguini or angel hair)
2 tablespoons olive oil
1 cup white onion, diced
2 cloves garlic, minced
2 cups grape tomatoes, halved and whole
2 cups broccoli florets
2 tablespoons tomato paste
1 cup reserved pasta water
1 pinch sea salt and pepper to taste
Optional: basil and Parmesan cheese for garnish
Directions:
- Bring a large pot of salted water to boil. Cook pasta according to package instructions. Reserve 1 cup of pasta water
- While pasta is cooking, heat oil in a large skillet. Add in onion and garlic, sauté until fragrant and onions are translucent (2 minutes)
- Add tomatoes, broccoli, and sausage and cook until vegetables are soft and sausage turns golden brown (5 minutes).
- Stir in tomato paste and salt and pepper to taste. Add pasta and reserved pasta water. Toss to combine.
- Optional: garnish with basil, fresh ground pepper, and Parmesan cheese.
