Chicken Sausage Caprese Pasta

Chicken Sausage Caprese Pasta

Servings: 4
What you’ll need:

1 package al fresco Sundried Tomato Chicken Sausage

1 lb rotini, penne, or any medium cut pasta

2 tbsps olive oil

3 cloves garlic, minced

2 pints grape tomatoes

Salt and pepper, to taste

8 oz fresh mozzarella cheese, diced

1/2 cup fresh basil, chopped

Directions:
  • Cook pasta according to package directions until al dente, drain and set aside.
  • Heat olive oil in a large skillet over medium heat and cook sausages until browned on both sides. Let cool slightly and cut into slices.
  • Add garlic to skillet and sauté until fragrant, about 30 seconds. Add tomatoes and cook, stirring occasionally, until tomatoes burst and release their juices and form a sauce, about 10 minutes. Season with salt and pepper to taste.
  • Add cooked pasta and sausages back into the skillet and toss until heated through. Stir in mozzarella and basil and serve immediately. Enjoy!
