Chicken Sausage & Cauliflower Grits

Chicken Sausage & Cauliflower Grits

What you’ll need:

1 package al fresco Sweet Italian Chicken Sausage, sliced (I used 2 links)

16oz cauliflower mash

2oz goat cheese

1 bell pepper, sliced thin

1/2 cup pint cherry tomatoes

1 tbsp. olive oil

1 tsp. chesapeake bay seasoning

1 tsp. salt

  • Cook cauliflower mash according to package
  • Heat a large frying pan over medium high heat, add olive oil
  • Add chicken sausage, peppers and tomatoes to the pan, season with chesapeake bay seasoning and ½ tsp salt
  • Let sausage mixture sautee for 15 minutes, tossing every few minutes until sausage starts to brown and peppers soften
  • Season cauliflower mash with ½ tsp salt and add goat cheese, stir until melted
  • Divide mash between two bowls, top with chicken sausage mixture
