Chicken Sausage, Potato and Kale Skillet

Chicken Sausage, Potato and Kale Skillet

What you’ll need:

1 package al fresco Spicy Jalapeno Chicken Sausage, sliced in half

1 medium yellow onion, thinly sliced

1 large bunch of kale, roughly chopped with stems removed

2 large cloves garlic, minced

4-5 medium sized Yukon gold potatoes, sliced into bite size pieces

4 tbsp. avocado oil (divided)

1 tsp. salt (divided)

fresh lemon and sea salt to garnish

Directions:
  • Cook potatoes and once cooked dry them off with a paper towel. Add 2 tbsp. avocado oil to a skillet and heat to medium high.
  • Add potatoes and 1/2 tsp. to the skillet. Cook for 10 minutes on medium heat, flipping occasionally.
  • Add onion, cover and cook for 5 minutes.
  • Add garlic and cook for an additional minute. The potatoes should now be fork tender.
  • Remove potatoes, onions and garlic from skillet and set aside. Add 1 tbsp. of oil and chicken sausage to skillet.
  • Cook sausage for 3-4 minutes and once done, add to plate with potatoes.
  • Add 1 tbsp. oil to skillet, kale and a pinch of salt to skillet. Cook for 3-4 minutes or until kale has turned bright green and slightly wilted. Add back potatoes and sausage to pan.
  • Warm all ingredients in skillet for a few minutes before serving. Garnish with lemon and salt as desired.
