What you’ll need:

1 package of al fresco Sweet Italian Style Chicken Sausage

2 large sweet potatoes (chopped)

1 bag of brussels sprouts (sliced in half)

Olive oil

Salt

Pepper

Rosemary

Ingredients for creamy herb sauce:

1 cup greek yogurt

3 cloves garlic

Handful of basil

Handful of parsley

Handful of coriander

Salt

Pepper

Directions:
  • Set the oven to 400 degrees
  • Then start by chopping the potatoes and brussels sprouts. Slice the chicken sausage too.
  • Toss the chopped potatoes and Brussels sprouts with 2 tbsp olive oil, salt, and pepper. Spread on a large sheet pan. Roast for 20 minutes, mixing halfway through.
  • While the potatoes and Brussels sprouts are roasting. Start on the herb sauce.
  • Add all ingredients into the food processor (or high powered blender) and blend until creamy consistency.
