Creamy White Bean Soup with Chicken Sausage

Creamy White Bean Soup with Chicken SausageServings: 7
What you’ll need:
2 packages al fresco Roasted Pepper & Asiago Chicken Sausage, diced
3 cups chicken broth - or water
3 medium potatoes, diced
1 carrot, diced
3 cups small white beans (frijoles blancos)
Salt to taste
1 celery stick, diced
1 bunch of cilantro, finely chopped
- Add chicken broth, potatoes, and carrots in a pan and cook over medium heat, for about 15 minutes or until potatoes and carrots are tender and you can insert a fork in them.
- Add the small white beans, stir, add salt to taste, followed by the celery and cilantro. Stir cook for another 3 minutes and add alfresco chicken sausage. Lower the heat and cook for another 5 minutes, remove from heat.
- Serve warm and garnish with cilantro. Enjoy!
