"We did it again! We have created another meal prep recipe that is ready in less than 20 minutes. Oh, and there is hardly any cooking!"
Fall Harvest Chicken Sausage Salad
Servings: 4What you’ll need:
1 package al fresco Rotisserie Style Chicken Sausage, sliced
6 cups mixed greens
2 cups frozen quinoa
1 cup frozen butternut squash cubes
2 oz goat cheese, crumbled
1/2 cup chopped scallions
1/4 cup slivered almonds
1/4 cup dried cranberries
Store bought avocado lime dressing
Directions:
- Cook quinoa according to package directions.
- Cook butternut squash according to package directions.
- While those are cooking, evenly divide mixed greens and remaining ingredients between 4 meal prep containers.
- Add quinoa and sausage.
- Place dressing in small containers to be put in salad containers.
