Glazed Chicken Apple Sausage & Sweet Potato Kabobs
Servings: 4What you’ll need:
2 packages al fresco Sweet Apple Chicken Sausage, sliced
1 large sweet potato cubed into 1 in pieces
1 red, yellow, and green bell peppers, cut into 1 in pieces
1 small sweet onion, cut into 1 in pieces
2 small zucchini, cut into 1 in pieces
1/2 cup apricot preserves
1 pinch sea salt
2 tsp olive oil
2 tbsp water
12 metal or bamboo skewers
Directions:
- Hear grill to medium-low. Prepare a baking sheet by lining with foil. Set aside.
- On stove top, boil sweet potato pieces for 5-7 minutes or until soft enough for skewer to go through.
- Prepare glaze in a small bowl by whisking apricot preserves, salt, olive oil, and water until smooth.
- Build skewers with sausage, cooled sweet potatoes, peppers, onion, and zucchini pieces.
- Brush glaze over skewers and place on grill. Cook for about 30 minutes, rotating over 5 minutes.
