Green beans & Ground Chicken Stir Fry

"As I think about the school year approaching, I’m taken back to my family’s hectic schedule during the school days. Despite the busyness, my mom was always able to put a nutritious meal on the table for us. I’m excited to share one of her simple and delicious recipes that has always been a favorite of mine, using Al Fresco’s Simply Seasoned Ground Chicken. This recipe is full of flavor and perfect for those busy school days!"

Green beans & Ground Chicken Stir Fry

Servings: 4
What you’ll need:

1 package Al Fresco Simply Seasoned Ground Chicken

1 lb fresh or thawed green beans

1 Tbsp finely minced fresh ginger

1 Tbsp dark soy sauce

½ tsp sugar

1 tsp cornstarch

2 Tbsp water

2 Tbsp chopped fresh garlic

½ cup chopped white onion

Optional: 1 Tbsp red chili paste

Optional: ½ cup finely chopped red bell pepper

Directions:
  • Mix ground chicken with dark soy sauce, ginger, sugar, cornstarch and water. Marinate for 10 minutes.
  • Heat 2 Tbsp oil in a large pan or wok on medium. Fry green beans for 6-8 minutes until they slightly char and soften. Remove them onto a plate.
  • Add 1 Tbsp oil to the same pan or wok and add garlic and onions. Fry for 1-2 minutes. Then add ground chicken. Cook until the ground chicken is almost done.
  • Optional: Stir in the red chili paste and red bell bell pepper.
  • Add in the green beans and toss to combine all the ingredients.
  • Serve over rice and enjoy!
