Grilled Chicken Sausages with Butternut Squash Relish

Grilled Chicken Sausages with Butternut Squash Relish

Servings: 4
What you’ll need:

1 package al fresco Sweet Italian Chicken Sausage

4 sausage buns

1 small to medium butternut squash cut into small cubes (about 5 cups)

2 tbsp. olive oil (for butternut squash)

1/8 cup olive oil (for relish)

2 tsp. kosher salt

1/2 tsp. pepper

1/4 cup apple cider vinegar

2 tbsp. shallots, finely minced

3 tbsp. sugar

2 tbsp. Peppadew peppers (or other pickled peppers), finely minced

1-2 tbsp. fresh parsley

Directions:
  • Preheat oven to 400 degrees and line a large baking sheet with parchment paper. Toss the cubed squash with the olive oil, 1 tsp. salt and 1/2 tsp. pepper and spread evenly into one layer on baking sheet.
  • Roast squash for 25 minutes, flipping once.
  • In a large bowl whisk the vinegar, olive oil, sugar, remaining salt until combined. Add shallots, peppers and parsley. Add the roasted squash and toss until well coated.
  • Meanwhile grill the al fresco chicken sausage until heated through and charred in spots. Grill the buns until lightly toasted.
  • Place the sausages in the buns and top with the butternut squash relish. Enjoy!
