Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce over LinguineServings: 6
What you’ll need:
1 (12 ounce) package al fresco Sweet Italian Chicken Sausage, fully cooked
1/2 lb dried linguine
2 teaspoons Extra Virgin Olive Oil
1 teaspoon garlic, minced
1 cup onion, chopped
3/4 cup dry red wine
1 (14.5 ounce) can diced tomatoes with Italian herbs, with juices
1 teaspoon dried oregano
1/2 cup light cream
2 tablespoons shredded Parmesan cheese
- Pan grill links on medium heat for 3 minutes per side. Cut sausage into 1/4" circles.
- Meanwhile, place a heavy skillet on medium-high heat, coat with oil. Add onions and sauté for 2 minutes, stir occasionally. Add garlic and sauté 30 seconds. Reduce heat to low and add wine, tomatoes, sausage, oregano, and black pepper. Add cream and cook for 1 minute.
- Cook linguine in boiling salted water until al dente. Drain.
- Portion cooked linguine onto warm plates or pasta bowls. Spoon sausage/sauce over pasta. Sprinkle each with Parmesan.
