Halloween Stuffed Peppers

"Here’s a fun Halloween dinner the whole family will love! It’s full of veggies and al fresco’s Italian chicken sausage makes this meal come together quickly and easily!"

Ingredients

3 al fresco sweet Italian style chicken sausage links, chopped

4 large bell peppers

1 tbsp olive oil

1/2 cup chopped onion (1/2 onion)

1 tsp minced garlic

2 cups cooked cauliflower rice

2 cups chunky marinara sauce

½ cup shredded cheddar cheese (vegan works too!)

Directions:

  • 1Preheat oven to 350°F.
  • 2Cut the tops off the peppers (put to the side for later) and remove the seeds. If the peppers do not sit flat, trim the bottoms slightly. Using the tip of a small knife, cut a jack-o’-lantern face into the side of each pepper.
  • 3In a large cast iron skillet, cook onion, garlic, and cut out pieces of peppers in the olive oil over medium-high heat until the onion turns translucent.
  • 4Stir in the sausage, marinara sauce, and cauliflower rice. Spoon the filling into each pepper, filling all the way to the top.
  • 5Put any extra filling to the side and place the peppers (along with their tops) in the cast iron skillet. Cover with foil and bake 35 minutes.
  • 6Remove foil, top with cheese and bake an additional 5 minutes or until cheese is melted and peppers are tender.
  • 7Enjoy!
