Italian Fried Rice

"For easy weeknight or weekend meals, al fresco always comes to the rescue with their fully cooked chicken sausages. From picky eaters to flavorful dishes, I was able to whip up this Italian Fried Rice within minutes! I was able to use leftover veggies and a little bit of pesto to tie the whole dish together, and of course the star of the show, Roasted Pepper & Asiago Chicken Sausage."

Italian Fried Rice

Servings: 4
What you’ll need:

1 package of al fresco Roasted Pepper & Asiago Chicken Sausage

2 cups leftover rice

1 tsp crushed red pepper

1 tsp Italian seasoning

2 tbsp oil

3 cloves garlic

1 tbsp pesto

3 sun dried tomatoes - chopped

1/2 cup onions - chopped

salt and pepper to taste

1 - 2 eggs

Directions:
  • In a skillet, heat up oil and add sliced garlic, crushed red pepper. Next add chopped sun dried tomatoes and pesto, stir everything together.
  • Add the onions and chicken sausage.
  • Add the rice, Italian seasoning and give everything a good mix. Add a fried o r scramble on top and enjoy!
