Meal Prep Sheet Pan Chicken Sausage, Potatoes, and Vegetables

What you’ll need:
1 package al fresco Sweet Italian Style Chicken Sausage, sliced
1 1/2 lbs baby red potatoes, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
12 oz broccoli, broken into florets
3 medium zucchini, sliced
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon sea salt
1/2 teaspoon ground pepper
1/2 teaspoon garlic powder
1 1/2 cups cooked quinoa
- Preheat oven to 400ºF and line a rimmed baking sheet with parchment paper.
- Add veggies and sausage to the baking sheet. Drizzle with olive oil toss with seasonings to coat.
- Place the pan in the oven and bake for 15 minutes. Gently remove the pan from the oven, flipping the veggies after 15 minutes, and then baking for an additional 10-15 minutes, or until the veggies are tender and the meat is heated through.
- Serve with quinoa.
