Mexican Quinoa Bowl with Chicken Sausage

Mexican Quinoa Bowl with Chicken Sausage

Servings: 6
What you’ll need:

2 packages of al fresco Roasted Pepper and Asiago Chicken Sausage.

1 ½ cups of tricolor quinoa

2 ½ cups of water or chicken broth

Salt to taste

1 ½ cup black beans, cooked

1 cup frozen corn

2 ½ cups of water or chicken broth

2 green onions, cut in small pieces

Bunch of cilantro, chopped

Directions:
  • Cook quinoa following the packet instructions.
  • In a skillet, add black beans, corn and chicken sausage, saute until the chicken sausage looks golden.Leave aside.
  • Once quinoa is almost done, add the saute mixture you made earlier, stir until well mixed, cover quinoa and let it cook for 1-2 minutes. Remove from heat.
  • Serve warm and Enjoy!
