One Pan Chicken Sausage with Peaches and Red Onion
Servings: 4What you’ll need:
1 package al fresco Smoked Andouille Chicken Sausage
1 large red onion, cut into chunks
3 ripe peaches, cut into 8 slices
6 thyme sprigs
1/4 cup olive oil
2 medium garlic cloves, coarsely chopped
1 tbsp. lemon juice
1 1/2 tsp. kosher salt
1 tsp. black pepper
Directions:
- Preheat oven to 425 degrees F.
- Cut chicken sausage into large pieces.
- Toss together onions, peaches, thyme, olive oil, garlic, and lemon juice in a large bowl; season with salt and pepper.
- Scatter mixture on your baking sheet.
- Roast in oven until peaches and onions have slightly crisp edges and juice is running, about 25 minutes.
- Serve immediately. Enjoy!
