One Pot spicy chicken sausage pasta

One Pot spicy chicken sausage pasta
Servings: 4What you’ll need:
1 package of al fresco Roasted Pepper & Asiago Chicken Sausage
cooking spray or olive oil to fry
1 onion, finely diced
2 tsp Old Bay seasoning
24 oz jar of tomato sauce
3 cups chicken stock
1 cup of frozen peas
14 oz rigatoni
4 tbsp grated parmesan cheese
2 tbsp fresh basil, chopped
Directions:
- Sautee chicken sausage in large pot, for about 3-5 minutes on medium heat
- Add diced onions and old bay seasoning and cook until onions are translucent
- Next add tomato sauce and chicken stock, and bring to a rolling simmer
- Stir the pasta into the pot and lower the heat to simmer, covering the pot
- Cook, stirring occasionally until rigatoni is cooked through (around 10 – 12 minutes)
- Once pasta is cooked, add in frozen peas and parmesan cheese and stir around for about 3 minutes
- Serve hot
