Potato, Pepper and Sausage Bowls

Potato, Pepper and Sausage Bowls

Servings: 6
What you’ll need:

1 package al fresco Sweet Apple chicken sausage, sliced

10 medium potatoes, peeled and diced

1 red pepper, diced

1 orange pepper, diced

1 yellow pepper, diced

1 medium onion, diced

1/2 cup avocado oil

1 tablespoon salt

Garlic pepper to taste

Directions:
  • Mix oil and seasonings in a large bowl.
  • Add potatoes and onions, coat thoroughly.
  • Spoon into a baking sheet or baking dish.
  • Bake at 500ºF for 15 minutes. After 15 minutes, add sausage and sweet peppers, and stir.
  • Bake at 500ºF for another 15 minutes.
