Sheet Pan Chicken Sauasage Fajitas

Servings: 4
What you’ll need:

1 package al fresco Mild Mexican Style Chicken Sausage, sliced

3 bell peppers, cut lengthwise

1 red onion, cut in wedges

1 tbsp olive oil

1 tsp each chili powder, paprika and oregano

1/2 tsp cumin

1 pinch salt and pepper, to taste

Optional: guacamole, rice, beans, tortillas, sour cream.

Directions:
  • Preheat oven to 400ºF. Line a large sheet pan with parchment
  • Place peppers, red onion and sausage on the sheet pan. Drizzle with olive oil and season with all spices. Toss to combine.
  • Bake for 20 minutes or until peppers are cooked and chicken sausage has heated through.
  • Serve with optional sides/toppings.
