Smoked Chicken Sausage Skillet with Veggies

Smoked Chicken Sausage Skillet with VeggiesServings: 4
What you’ll need:
1 package al fresco Sweet & Smoky BBQ Chicken Sausage
1 tablespoon extra virgin olive oil
1 medium green bell pepper, cored and chopped
1 medium red bell pepper, cored and chopped
1 medium zucchini, chopped
kernels from two ears of sweet corn
salt and pepper to taste
1 tablespoon mixed chopped fresh herbs
- Heat the oil in a large skillet over medium-high heat. Add the sausages and cook until they are lightly browned, about 5 minutes. Transfer sausages to a plate.
- Add bell peppers to skillet, cook for 2 minutes. Add zucchini and cook for 3 more minutes, until the edges of the vegetables begin to brown. Stir in the corn and cook for 2 more minutes.
- Stir in salt, pepper, and herbs. Add the sausages back to the skillet and warm for 1 minute.
