Summer Veggies, Chicken Sausage, and Tortellini

"It’s a simple recipe that tastes so very good thanks to fresh ingredients and tasty shortcuts! My favorite part about this dish though, is that it reheats really well the next day for lunch — leftovers for the win!"

Ingredients

1 package al fresco Mild Italian Style Chicken Sausage, sliced

1 lb cheese tortellini

4 tablespoons butter

1 large zucchini, thinly sliced

1 large yellow squash, thinly sliced

1 cup cherry tomatoes, halved

2 cloves garlic, minced

2-3 tablespoons white wine

salt and pepper

optional: red pepper flakes and fresh basil for garnish

Directions:

  • 1Bring a pot of well-salted water to boil and cook tortellini according to package directions.
  • 2While tortellini is cooking, melt butter in a large sauté pan and add sliced sausage, zucchini, yellow squash, and cherry tomatoes to the pan. Cook for 5-7 minutes over medium heat.
  • 3Add garlic and sauté for another 2-3 minutes, then add white wine.
  • 4Toss in tortellini, then season with salt and pepper to taste.
  • 5Optional: garnish with red pepper flakes and fresh torn basil leaves.
