
Sweet Italian Chicken Sausage Risotto

Sweet Italian Chicken Sausage Risotto
Servings: 4What you’ll need:
1 (12oz) package al fresco Sweet Italian Chicken Sausage, cut into 1/4" slices
1 tablespoon olive oil
1 cup red onion, chopped
1 tablespoon garlic, minced
1/2 teaspoon dried thyme
2 cups Minute® White Rice
1/4 cup dry white wine
2 cups chicken broth, reduced sodium
1/2 cup fresh grated Parmesan Cheese
1 cup frozen petite sweet peas
Directions:
- Heat oil in a medium skillet over medium-high heat. Add sausage, onions and garlic and sauté until onions are translucent, 3-5 minutes.
- Add rice and stir to coat all grains. Add wine and sauté 1 minute. Add chicken broth and thyme. Bring mixture to a boil, stirring frequently. Remove from heat. Cover and let stand 5 minutes.
- Stir in peas and grated Parmesan cheese. Serve topped with parsley and shaved Parmesan, if desired.
