
Sweet Potatoes & Sausage Stew

Sweet Potatoes & Sausage Stew
Servings: 3What you’ll need:
1-pack of Al Fresco’s Roasted Pepper & Asiago Sausages, chopped
1 tablespoon cooking oil
½ onion, chopped
3 cloves of garlic, minced
3 cups of chicken broth
2 or 3 medium-size sweet potatoes, chopped
1 stick of celery, chopped
½ red bell pepper, chopped
Salt & pepper, to taste
Directions:
- In a large pot over medium-high heat, toss in Al Fresco’s sausages and cooking oil and stir until sausages are browned
- Combine onions and garlic and stir until both are slightly browned
- Add in the chicken stock and let simmer for 30 seconds
- Add in sweet potatoes, celery, red bell pepper and let it all simmer for 20-25 minutes until sweet potatoes are softened
- Season with salt & pepper to taste and serve
