Chicken Sausage, Peppers, and Onion Summer Crostini

"I love cheese boards and wanted to incorporate a fun and easy finger food snack that not only pairs well with wine but also the cheeses."

Ingredients

1 package al fresco Roasted Pepper & Asiago Chicken Sausage

1 red bell pepper, sliced

1 onion, sliced

1 loaf baguette, sliced

salt & pepper to taste

2 tsp olive oil

1 tsp oregano

3 cloves garlic, sliced or minced

Optional: queso or cheese slices

Directions:

  • 1Toast sliced baguette in oven at 320 degrees F for 5-7 minutes or until golden brown.
  • 2Heat cast iron or skillet and drizzle with olive oil.
  • 3Add chicken sausage, peppers, onions, and season with salt, pepper, and oregano. Cook on med-high heat for 5-7 minutes, or until peppers and onions are charred.
  • 4Add garlic and cook for an additional minute.
  • 5Remove sausages and cut into bite-size pieces. Place chicken sausage, peppers and onions on each piece of toasted bread.
  • 6Drizzle with some queso or cheese if desired.
