Easy Chicken Sausage, Red Beans and Rice

Ingredients

1 package al fresco Smoked Andouille Chicken Sausage

1 green bell pepper, diced

1 yellow onion, diced

2 celery stalks, diced

4 garlic cloves, minced

2 tbsp. tomato paste

1/2 tbsp. Cajun seasoning

3 cups beef broth

1 tbsp. hot sauce

1 15.5 oz. can red kidney beans, drained and rinsed

1 bay leaf

2 tbsp. corn starch (if desired for extra thickness)

Directions:

  • 1In a pot, over medium heat, add olive oil and heat for 1 minute. Add green pepper, onion, celery, and garlic, sauté for 5 to 7 minutes.
  • 2Next, add in tomato paste and Cajun seasoning and stir to combine.
  • 3Pour in beef broth, hot sauce, red beans, sausage, and bay leaf.
  • 4Bring to a boil, then reduce heat down to a simmer over medium heat and cook for 15 minutes.
