Grilled Foil Pack with Potatoes and Corn

"This grilled foil packed with Roasted Pepper Chicken Sausage is a must try this summer. It takes a few minutes to prepare, and they make a full delicious meal packed with flavors."

Ingredients

1 package of Roasted Pepper & Asiago Chicken Sausage @alfrescochicken

1 lb of shrimps cleaned and deveined

1 lb of red potatoes cut in half

2 ears of corn

1 tbsp Cajun seasoning

Salt and black pepper to taste

1 stick of butter

1 tbsp fresh parsley for serving

Directions:

  • 1Bring a large pot to the boil and season with salt.
  • 2Slice the red potatoes and transfer them into the pot.
  • 3Boil potatoes for 5 - 7 minutes. Remove them from the pot and let them cool.
  • 4Garnish with fresh cilantro and scallions.
  • 5 In a large bowl, transfer potatoes, corn, shrimps, and sausage
  • 6Season with Cajun seasoning.
  • 7Drizzle the melted butter and toss to combine.
  • 8Transfer the mixture into foil paper and fold and seal to create a packet.
  • 9Place packet onto the grill and cook for 15 minutes.
  • 10Very carefully open the packet to check if everything looks done
  • 11Cool for 5 minutes, sprinkle fresh parsley than serve.
