Paleo Chicken Sausage Veggie Bowls

"I am always looking for meals that are easy, healthy and delicious. These sausage and veggie bowls fit the bill perfectly. They require only a handful of healthy ingredients and everything cooks together in one skillet."

Ingredients

1 package al fresco Roasted Garlic Chicken Sausage, sliced

2 tbsp olive oil

2 sweet potatoes, chopped

2 cups broccoli, chopped

1 large red pepper, chopped

2 cups Brussels sprouts, chopped

1/2 cup Ranch dressing

Directions:

  • 1In a large skillet, heat olive oil over low heat.
  • 2Add veggies and chicken sausage to skillet. Cook for 10-12 minutes, flipping every 2-3 minutes.
  • 3Cook until veggies and sweet potatoes are tender and remove from heat.
  • 4To serve, add sausage and veggies to a bowl and top with Ranch.
