Summer Grilled Caprese Salad

"Quick and easy summer grilled meal!! Delicious salad with simple yet yummy and healthy ingredients."

Ingredients

1 package of al fresco chicken sausage of your choice

14 grape tomatoes

4 oz. mozzarella cheese, pearls

fresh basil leaves

Salt and freshly ground black pepper to taste

Glaze balsamic vinegar, to drizzle

Directions:

  • 1Grilled the chicken sausages until golden and cut them in slices, about 2 inches wide.
  • 2Wet your skewers and alternating the salad items and the sausage, thread 1 piece of sausage, 1 tomato, and 2 pieces of mozzarella pearls, followed by basil onto each skewer, repeat. Refrigerate until ready to grill.
  • 3Grill the skewers for 40 seconds each side, remove.
  • 4Sprinkle with salt and pepper to taste and drizzle with glaze balsamic vinegar.
  • 5Serve warm or a few hours after grilling.
